Aubergine/eggplant is a wonderful blank canvas, but when seared and charred over flames, it takes on a delicious smokiness that is hard to beat and it is used in plenty of Middle Eastern-style dishes.
This is a very adaptable recipe which you can take in different directions, such as using baharat or ras el hanout spice mix to change things up. However, this simple approach is very tasty and well worth trying.
